Recipe Ingredients for CJ's Chicken dumpling soup

6 eggs
1 1/2 cup spelt flour
1/2 cup white flour, unbleached
1/2 tsp salt
2 tbls buttermilk
104 oz chicken broth
14 1/2 ounce canned tomatoes
1 onion
1/4 cup grated carrot
1/2 bell pepper
1/2 cup dry white wine
12 1/2 ounces canned turkey breast
1 tbls olive oil
1 tbls smart balance
1 tsp season salt

Recipe Directions for CJ's Chicken dumpling soup

  1. saute onions in 2 tbls oil

  2. add dry bell pepper flakes, grated carrot, seasoning.

  3. simmer in chicken broth, water and diced tomatoes.

  4. Add canned turkey and bring back to simmer.

  5. Meanwhile make the dumplings.

  6. For dumplings:

  7. beat eggs,

  8. add flour, salt, buttermilk.

  9. Drop into boiling broth and simmer until fluffy

  10. Each bowl is approximate 2 cups per serving
