Recipe Ingredients for Citrus-Salmon stuffed tomatos

2 tsp Lemon Peel
3 tsp Orange Peel
0.5 cup Bread Crumbs
5 medium (4-1/8" long) Onions, Spring Or Scallions
1 oz Tarragon
40 oz Salmon, Atlantic, Wild

3 tbsp Yogurt Dip
0.25 cup, pared, chopped Cucumber, Peeled
1 medium (4-1/8" long) Onions, Spring Or Scallions
0.25 tsp Sea Salt
0.5 tsp Pepper, Black

Recipe Directions for Citrus-Salmon stuffed tomatos

  1. Use leftover salmon from citrus tarragon panko crusted salmon

  2. chill salmon, remove from skin and discard skin and oranges (oranges get stuck the the skin and you don't need them for this recipe anyways)

  3. peel, de-seed and chop half of a cucumber (about a quarter of a cup chopped) and add to Salmon

  4. chop one yellow tomato in half (can use red but yellow heirloom is sweeter) scoop out insides and chop and add to salmon/cucumber mixture

  5. mix up the salmon mixture with yogurt dip, chop green onion and add salt and pepper to taste

  6. scoop about a quarter of a cup of the mixture into the hollowed out tomatoes and garnish with some green onion and black pepper

  7. service cold
