Recipe Ingredients for Citrus Salad with Grilled Chicken

2 tbsp freshly squeezed lemon juice
2 tsp honey
1/2 tsp Dijon mustard
1/8 tsp kosher salt
1 Freshly ground black pepper to taste
2 tbsp extra virgin olive oil
1 large orange
8 oz skinless, boneless chicken breasts
6 cups lettuce
1/2 cup parsley, roughly chopped
3/4 cup thinly sliced fennel
1 cup sliced cucumber

Recipe Directions for Citrus Salad with Grilled Chicken

  1. Slice off the peel and pith from the orange and cut between the membranes to remove the segments- set aside.

  2. In large bowl, combine lemon juice, honey, mustard, salt, pepper and olive oil.

  3. Whisk well to combine.

  4. Reserve 3 tsp of dressing for the chicken.

  5. Heat a grill or grill pan over medium-high heat.

  6. Brush both sides of chicken breast with reserved dressing and grill for 5-6 minutes per side or until cooked through.

  7. To the large bowl with prepared dressing, add greens, parsley, orange segments, fennel and cucumber, toss gently.
