Recipe Ingredients for Citrus Roasted Chicken

4 pound chicken
1 orange
1/2 cup Lemon juice (Actually use 3 whole lemons)
8 garlic cloves (Actually use a whole garlic)
3 garlic cloves
2 tablespoons oregano - fresh
1/4 cup orange juice - frozen concentrate thawed
2 tablespoons extra virgin olive oil
2 tablespoons pepper
30 ounce chicken stock

Recipe Directions for Citrus Roasted Chicken

  1. Preheat oven 400 degree

  2. Clean & salt Chicken inside and out

  3. Stuff chicken with cut up: 1 orange, 1 lemon, whole garlic.

  4. Pour chicken stock in bottom of roaster pan. Put chicken on roasting rack and place in roaster pan. Cook 1 hour uncovered.

  5. Take out of oven and baste with the below sauce.

  6. 2 T fresh oregano

  7. 2 T Extra Virgin Olive Oil

  8. 3 chopped garlic cloves

  9. 1/4 Cup lemon juice

  10. 1/4 cup orange juice concentrate

  11. 2 T pepper

  12. Cook an additional 45 minutes more basting often.
