Flavorful, quick chicken recipe. Serve with warm whole wheat tortillas, refried beans and reduced-fat shredded cheese.

Recipe Ingredients for Citrus-Marinated Chicken for Tacos

1 chicken breast, sliced into 1/4" thick tenders
1 tablespoon lime zest
2 tablespoons lime juice
1/4 cup orange juice, light
3 cloves garlic
1/4 cup cilantro, finely diced
1/2 tsp cumin
1/2 cup onion, thinly sliced

Recipe Directions for Citrus-Marinated Chicken for Tacos

  1. In a large shallow bowl, combine lime juice and zest, orange juice, garlic, cilantro and cumin.

  2. Slice chicken breast into tenders or thin strips. Add to mixture, turning to coat.

  3. Cover chicken and marinade and refrigerate at least 1 hour, turning once or twice.

  4. Heat a medium skillet coated with cooking spray over medium-high heat.

  5. Remove chicken from marinade and add to pan. Add onions. Discard marinade, though you may want to use a little when you're cooking the chicken.

  6. Saute chicken and onions about 3 minutes per side or until chicken is no longer pink and onions are soft.

  7. Serve with tortillas, beans and cheese for a quick taco dinner.
