A zesty, citrusy, fruity sensation! Mouth-wateringly tingly!

Recipe Ingredients for Citrus Concoction

100 g butter, softened
200 g sugar
100 g self-raising flour
7 g lemon, sliced
2 eggs
1 cup cream, fluid, half and half
200 g apple sauce
500 g icing sugar

Recipe Directions for Citrus Concoction

  1. Grease and line two 8 inch cake tins

  2. Pre-heat oven to 180 degrees celsius/350 degrees fahrenheit/Gas Mark 4

  3. Using an electric whisker, mix 100g softened butter, 100g sugar, 100g self-raising flour and 2 eggs together, until thick and well-mixed.

  4. Divide mix inbetween two 8 inch cake tins equally

  5. Place two cake tins into oven for 30 minutes, untill they are well risen and springy to the touch

  6. Leave to cool for 1 hour in tins

  7. Remove each cake from tin, and peel off greaseproof paper slowly, but carefully

  8. Using the electric whisk on a low speed, whisk 100g sugar into 1 cup cream, until thick and of a 'cake filling' consistency

  9. Smooth all the cream on top of the first cake

  10. Spoon all of the 200g on top of the cream filling

  11. Place second cake on top of the bottom cake and filling firmly, and press down

  12. Mix 500g icing sugar with sufficient cold water to create thick icing mix. Cover the entire cake with the white icing coating.

  13. Place in fridge to set for 24 hours.

  14. Voila, your perfect citrus concoction! Serve with hot custard, whipped cream, ice cream, and a cup of tea!
