A light, robust, and perfect pairing for Latin inspired dishes, soups, and casseroles. Great with Yummy Chicken Tortilla Soup or low-fat turkey or soy crumble tacos, too! Substitute lemon for lime if that's what is on hand! Makes 4, 3/4 cup servings.

Recipe Ingredients for Citrus Cilantro Brown Rice

2 1/4 cups water or chicken broth, fat-free, reduced sodium
1 cup brown rice
1/2 tsp. olive oil
1/8 tsp. salt
1/8 cup minced onion
1 tbsp. lemon juice
1/2 tsp. lemon zest
1/8 cup chopped cilantro

Recipe Directions for Citrus Cilantro Brown Rice

  1. In a medium-sized pot, bring water or broth, rice, olive oil, salt, and minced onion to a boil.

  2. Cover and reduce heat to low. Cook for 35 to 40 minutes or until liquid is absorbed and rice is tender.

  3. Uncover and add lemon juice, zest, and cilantro. Fluff and mix with fork. Leave standing 5 minutes, then serve.
