A delicious and healthy alternative to a 3-egg butter-laden omelette! You won't be disappointed. The cipollinis are extremely sweet onions, and really make it. I can't express how important the cipollini is to the taste.

1 chopped cipollini onion

1 ounce of shredded cheddar

Recipe Directions for Cipollini and Spinach Omelet w/ shredded cheddar
