Romanian ciorba - a sour, thick, delicious soup made completely from scratch.

Recipe Ingredients for Ciorba de perisoare

1 onion
2 carrots
1 cup celery root
2 lbs Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles
3 eggs
2 tbs Flour
3 cups Vinegar
2 tbs Parsley
5 Potatoes
4 cups kale
1 cup parsley
2 cups chopped mushrooms

Recipe Directions for Ciorba de perisoare

  1. Chop onions, grate carrots and celery root.

  2. Fry onions in oil and once somewhat transparent, add other grated roots.

  3. Pour water over all and let cook.

  4. Once roots have softened a bit, add potatoes, cubed (but not too small).

  5. Meanwhile, mix ground meat with 2 eggs. Add flour, as well as salt and pepper to taste. Roll meat mixture into tablespoon sized balls.

  6. Add meatballs to the soup (keep adding water so that everything is completely covered by water). Simmer until the meatballs rise (this

  7. means they are done).

  8. Once the meatballs are done, add the kale, chopped in fairly large pieces. Let kale cook until it has changed color to a darker green/brown.

  9. To turn the soup sour, add vinegar at the end.

  10. Season soup with fresh chopped parsley, salt and pepper.

  11. At the very end, drop an egg into the soup, one tiny bit at a time, while stirring continuously.
