Great vegetable soup, extremely healthy and delicious

Recipe Ingredients for Ciorba doctorandului (The PhD student's soup)

1 squash, summer, large
4 carrots
1 sweet potato
50 g parsley root
2 small green peppers
1 medium turnip
10 sprigs parsley
8 g dill weed
1 spring onion
1 salt, pepper to taste
2 cups cauliflower
150 g peas (frozen)
150 g green beans (frozen)
2 l chicken broth

Recipe Directions for Ciorba doctorandului (The PhD student's soup)

  1. Boil the bones and the skin from a chicken or a chicken breast in 2l water. Add salt and pepper to taste. Take out the foam formed at the surface of the soup.

  2. Cut all the vegetables in small pieces.

  3. Add the vegetables in the clear boiling chicken soup.

  4. Let them boil for one - two hours, depending on how soft you want the vegetables to be.

  5. Taste it for salt and pepper, add the leaves - parsley, dill and lovage and the juice from 1/2 a lemon. Let it boil for another 5 minutes.

  6. You can serve it with freshly baked bread and light youghurt.
