A high-protein, yet light, seafood stew.

Recipe Ingredients for Cioppino

3 tablespoons butter
3 tablespoons olive oil
1 or celery fennel bulb
2 onions, chopped
1 cup fresh parsley, chopped
12 cloves garlic, minced
3/4 teaspoon dried crushed red pepper flakes, plus more to taste
28 ounces crushed tomatoes with basil, Muir Glen
1 1/2 cups dry white wine
6 cups chicken broth
2 teaspoons bay leaves
1 tablespoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
2 pounds raw clams
18 mussels, cleaned and debearded
1 pound crabmeat (if in the shell, + 1/2 pound)
1 1/2 pounds large shrimp - peeled and deveined
1 1/2 pounds bay scallops
1 1/2 pounds cod or tilapia fillets, whole

Recipe Directions for Cioppino

  1. Heat the oil and butter in a very large pot over medium heat. Add the fennel (or celery), onion, and parsley, then sauté until the onion is translucent, about 10 minutes.

  2. Add the garlic and 3/4 teaspoon of red pepper flakes, and sauté 2 minutes.

  3. Stir in the tomatoes with their juices, wine, chicken stock and bay leaf. Add basil, thyme, and oregano. Mix well, then bring to a boil. Reduce the heat to medium-low. Cover and simmer until the flavors blend, about 60 minutes.

  4. Stir in the clams and mussels. Cover and simmer over medium heat 5 to 7 minutes until clams open. Lower heat to medium low, add crabmeat, shrimp, and scallops. Lay fish filets on top then slightly submerge the whole filets. Cover and simmer an additional 5 to 10 minutes, until fish has poached.

  5. Ladle soup into bowls and serve with brown rice or warm, crusty bread!
