Seafood Stew with Tomatoes and Basil

Recipe Ingredients for Cioppino

2 tbsp olive oil
1/2 cup onion, chopped
1 tbsp garlic, chopped
2 tsp oregano, dried
3/4 tsp fennel seeds
1 1/4 cups tomatoes, crushed with added puree
1/2 cup white wine, dry
6 1/2 oz clams, canned, chopped, drained, liquid reserved
1/2 lb shrimp, uncooked, lrage, peeled, deveined
3 oz crabmeat, drained
1/4 cup basil, chopped fresh
1/8 tsp cayenne pepper
1 1/4 cups clam juice

Recipe Directions for Cioppino

  1. Sautee onion, garlic, oregano and fennel seeds over medium heat until onion is tender

  2. Add tomatoes, clam juice, white wine and reserved clam liquid. Boil about 15 minutes until slightly thickened.

  3. Add clams, chrimp and crabmeat and simmer 2 minuted.

  4. Mix in fresh basil and simmer until shrimp are opaque, about 2 minutes.

  5. Season to taste with cayenne, salt and pepper
