Jamie Eason's Cinnamon Swirl Protein Bread, modified slightly.

Recipe Ingredients for Cinnamon Swirl Protein Bread

2 cup dry Old Fashioned Quaker Oats
24 teaspoon Truvia
2 serving American Pure Whey
3 tsp Baking Powder
2 tsp Cinnamon, Ground
0.5 tsp Sea Salt
2 large Egg, White
8 fl oz Original Almond Breeze Unsweetened
0.33 cup Pumpkin

Recipe Directions for Cinnamon Swirl Protein Bread

  1. Preheat oven to 350 degrees and spray loaf pan with non-stick spray.

  2. In small bowl combine:

  3. 1/3 cup Truvia or Splenda

  4. 2 tsp cinnamon

  5. (set aside)

  6. In a large bowl combine:

  7. (whisk together)

  8. 1 1/2 cups oat flour (or 2 cups oatmeal, ground to fine flour consistency)

  9. 2 scoops vanilla or cake batter flavored protein powder

  10. 1 tbsp baking powder

  11. 1/2 tsp salt

  12. 1/2 cup Truvia or Splenda

  13. In a medium bowl combine:

  14. (whisk together & add to large bowl)

  15. 2 egg whites or 1 whole egg

  16. 1 cup unsweetened almond milk (Almond Breeze)

  17. 1/3 cup of natural canned pumpkin

  18. Pour a shallow layer of batter into the loaf pan (about 1/4 of the batter). Sprinkle heavily with half of the cinnamon/sugar mixture. Repeat with remaining batter & cinnamon/sugar on top. Draw a knife through the batter to marble.

  19. Bake for 45 to 50 min. Let cool for 10 min. Bread will be dense.

  20. Makes 12 servings:
