Easy banana muffins if you don't like nuts - leave them out.

Recipe Ingredients for Cinnamon Spiced Banana Nut Bread

1 c flour
1 c wheat flour
1 c brown sugar
1 tbsp baking powder
1 tsp ground cinnamon
1/4 tsp baking soda
4 egg whites
1/2 c low fat buttermilk
1/3 c unsweetened applesauce
1 tsp vanilla
1 c mashed banana
1/2 c chopped walnuts

Recipe Directions for Cinnamon Spiced Banana Nut Bread

  1. In a large bowl combine all dry ingredients and make a well in center.

  2. Beat the eggs white until foamy. Stir in the buttermilk, applesauce and vanilla. Stir in bananas until well combined.

  3. Now add banana mixture to dry until just moistened. Fold in walnuts

  4. Pour into muffin tin sprayed with non stick spray.

  5. Bake at 350 for 20-25 minutes or until browned.
