Recipe Ingredients for Cinnamon rolls

3/4 c sugar
4 1/3 c flour
3/4 c butter
1 c soy milk
1 tsp salt
2 tsp active dry yeast
2 eggs
2 tsp vanilla
1 tbsp cinnamon

Recipe Directions for Cinnamon rolls

  1. Combine 1/2 C sugar, 1 C flour, salt and active dry yeast in large bowl

  2. In small saucepan over medium heat, warm soy milk and 1/2 C butter to 110 degrees.

  3. Add milk and butter to dry ingredients and mix thoroughly. Beat batter for 1-2 minutes until smooth.

  4. Beat in eggs and vanilla, then add remaining flour (reserving 1/3 C) slowly until soft dough forms.

  5. Turn dough onto floured surface and knead in remaining 1/3 C flour. Return dough to bowl, cover and let rise 1 1/2 - 2 hours.

  6. Punch down dough and cut into two pieces. Cover and let dough rest 15 minutes.

  7. Combine remaining 1/4 C sugar and cinnamon. Melt remaining 1/4 C butter on stove.

  8. Roll out dough into large rectangle (dough should be about 1/4" thick). Brush with butter and sprinkle with cinnamon and sugar. Lightly drizzle caramel sauce over top.

  9. Roll dough tightly and shape into log. Trimming ends, cut into five pieces.

  10. Repeat with remaining dough.

  11. Place cut rolls on cookie sheet and let rise 1 - 1 1/2 hours.

  12. Bake 20 minutes at 350 degrees.

  13. Let cool on wire rack. Drizzle remaining caramel sauce over the top and serve warm.
