Recipe Ingredients for Cinnamon Raisin Oat cake

1 c water
1/2 c butter
1/2 c honey
1/2 c splenda granulated
2 1/3 c oat flour
1/2 c whole wheat pastry flour
1 t baking soda
1/2 t salt
1 1/2 t cinnamon
2 egg whites
1 egg
1/2 c lowfat buttermilk
1 c raisins or other chopped dried fruit

Recipe Directions for Cinnamon Raisin Oat cake

Combine dry ingredients & mix well. Combine water, butter and honey in saucepan, bring to boil, remove from heat, allow to cool. Mix eggs and buttermilk thoroughly and add raisins. Alternate adding honey mixture and egg mixture to dry ingredients, mixing each well before another addition. Pour into greased and floured 8 X 11.5 cake pan. Bake at 375 degrees for about 25 min. then reduce heat to 350 and continue cooking about 10 - 15 more min, until toothpick comes out with only a few crumbs. Cool 10 minutes in pan, turn out onto wire rack and cool completely. Add glaze or powdered sugar when cool if you like.
