Homemade Cinnamon Bread low in sugar

Recipe Ingredients for Cinnamon Raisin Bread

5 cups flour
2 packages dry yeast
1 cup milk
3/4 cup water
1/4 cup sugar
1/4 cup oil
2 tsp salt
1 egg
1 cup raisins
1 tablespoon butter
2 tablespoons cinnamon

Recipe Directions for Cinnamon Raisin Bread

  1. Stir together 2 cups flour, yeast and cinnamon in large mixing bowl.

  2. Heat milk, water, oil, sugar & salt in a sauce pan on low heat. (WARM TO THE TOUCH). Too hot will kill the yeast. (120 - 130 degrees) Add liquid mixture to the dry mix, using electric hand mixer blend on low speed until smooth, about 3 mins.. Blend in egg. Stir in raisins with a spoon. Gradually stir in enough remaining flour to make a moderately soft dough turn dough out onto a floured surface. Knead adding remaining flour until smooth and silky. Cover dough with bowl and let rest for about 20 mins.

  3. After 20 mins. punch down dough and divide into 1/3. Roll into a loaf and drop into a small 2 lb loaf pan (8"l x 3.75" w x 2.3/8' d) cover with a towel in a warm place and let rise for 45 minutes, should double in size. Brush with melted butter and place into a preheated 375 degree oven for 30 - 45 minutes. Tap the loaf with the back of a spoon, should sound hollow.
