I modifed this recipe and used Splenda Baking Sugar instead of real sugar. Great for diabetics and reduced the calorie count per one ounce slice to 86 calories!!!! Tastes like cinnamon rolls. Yum!

Recipe Ingredients for Cinnamon Raisin Bread

4 cups all-purpose flour
2 1/2 tsp salt
2 1/2 tsp active dry yeast
6 tbls butter, reserving 2 tbls for topping
1 cup 2% milk
2 tbls 2% milk
2 tbls honey
2 eggs
1 cup raisins
8 tsp splenda baking sugar
4 tsp ground cinnamon

Recipe Directions for Cinnamon Raisin Bread

  1. Combine flour, salt and yeast in bowl of electric stand mixer. Melt 4 tablespoons butter in saucepan over low heat; stir in milk and honey until mixture is warm but not hot. Add eggs and whisk to combine; remove from heat.

  2. Attach dough hook to mixer. Pour wet ingredients and raisins over dry ingredients (I soaked the raisins in hot water before using in this bread to ensure that they were moist). Turn mixer to low and stir until dough separates from side of bowl and forms a ball. Knead on low about 2 minutes longer.

  3. Place dough in lightly oiled bowl covered with plastice wrap. Set in warm place and let rise 1 to 1 1/2 hours or until dough is doubled in bulk.

  4. Punch down dough and separate into 2 balls. Shape each ball into 8 x 10 x 1/2 inch rectangle. Brush tops of dough with 1 tablespoon melted butter.

  5. Combine Splenda Baking Sugar and cinnamon in small bowl. Set aside 2 tsp of mixture; spread remaining mixture evenly across dough.

  6. Roll up each slab of dough and pat to shape into loaves. Place loaves in lightly greased and floured loaf pans. Cover with plastic wrap. Let rise 1 to 1 1/2 hours.

  7. Bake loaves at 375 degrees for 35 minutes, turning once to ensure even baking. Loaves should be golden brown and internal temperature should register 180 degrees F. Brush tops with remaining 1 tablespoon melted butter; sprinkle with reserved cinnamon-sugar misture. Cool 10 minutes. Remove bread from loaf pans; cool completely on wire racks.
