Recipe Ingredients for Cinnamon Pumpkin Protein Pancakes

0.33 cup dry Old Fashioned Quaker Oats
0.25 cup Pumpkin
1/4 cup All Whites Liquid Egg Whites
1 serving American Pure Whey
1/4 tsp Baking Powder
1 teaspoon Truvia
0.13 tsp Pumpkin Pie Spice
0.13 tsp Nutmeg, Ground
0.5 tsp Cinnamon, Ground

Recipe Directions for Cinnamon Pumpkin Protein Pancakes

  1. Grind the oats into a fine powder (if you're not using oat flour).

  2. Mix all the ingredients well in a medium sized bowl with a spatula.

  3. Heat a skillet and coat with a light layer of nonstick spray.

  4. Reduce heat on skillet to medium and spoon batter onto skillet. (Make sure the batter is only about 1/4 - 1/3 inch thick to cook without burning.)

  5. Cook for 1-2 minutes until the edges of the pancake lift easily off the skillet. Flip and cook the other side.
