Recipe Ingredients for Cinnamon Pumpkin Banana Bread

2 medium (7" to 7-7/8" long) Bananas
16 oz Pumpkin
1 tsp Vanilla Extract
2 large Egg, White
1 cup Oats, Regular And Quick And Instant, Unenriched
2 cup Whole Wheat Flour
12 tbsp Organic Flax Seed Meal
0.75 cup Sugars, Granulated
1.5 Teaspoon Baking Powder
0.5 teaspoon Baking Soda
0.25 tsp Salt, Table
3 tsp Pumpkin Pie Spice

Recipe Directions for Cinnamon Pumpkin Banana Bread

  1. Preheat oven to 350 degrees.

  2. Coat 2 standard loaf pans with cooking spray.

  3. In a food processor, combine the pumpkin puree, bananas, vanilla and eggs.

  4. Process until smooth, scraping down the sides as needed.

  5. Add the flour, rolled oats, flax meal, sugar, baking powder, baking soda, salt and pumpkin pie spice.

  6. Process until thoroughly blended, about 30 seconds, stopping to scrape the sides as needed.

  7. Transfer the batter to the prepared loaf pans.

  8. Bake for 45-50 minutes.

  9. Upon removal from pans, let cool completely before slicing.
