Recipe Ingredients for Cinnamon Pecan Muffins

1 cup flour
1/2 cup oatmeal
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/3 cup chopped pecans
1 egg
1/4 cup evaporated skim milk
1/4 cup (a bit more if needed) water
1/8 cup vegetable oil
1 teaspoon vanilla extract
1/8 cup jam

Recipe Directions for Cinnamon Pecan Muffins

  1. Combine flour, oats, baking powder, oats, salt, and cinnamon.

  2. In separate bowl combine remaining wet ingrediants.

  3. Combine both bowls, add a bit more water if needed. You want a fairly thin batter since the oats will absorb quite a lot of moisture. Don't overmix.

  4. Put into NINE muffin cups, filling the three empty ones with water.

  5. Cook on 400 degrees for 10 to 14 minutes.
