sponge: 3C lukewarm milk, 2 1/2t dry yeast, 2T honey, 4C flour. Bread: 1/4C melted butter, 11/2C oats, ~3C flour; will depend on humidity. spread: 1/4C sugar, 2T cinnamon

Recipe Ingredients for cinnamon oatmeal bread

5 cup Whole Wheat Flour
3 cup Milk, Reduced Fat, Fluid, 2% Milkfat
2 tbsp Honey, Strained Or Extracted
3 tbsp Unsalted Butter
1.5 cup dry Old Fashioned Quaker Oats
0.25 cup Sugars, Granulated
2 tbsp Cinnamon, Ground
1 oz Yeast

Recipe Directions for cinnamon oatmeal bread

Place sponge ingredients together;whisk at least 100 strokes, getting out most lumps. Put in bowl; cover with plastic wrap and tea towel; set in warm place; let rise until double, about 1 hour. Add bread ingredients with wooden spoon. Turn out onto floured counter; knead ~ 10 minutes, adding flour as needed. Place in greased bowl; turn to coat completely. Cover with tea towel; let rise until double -- about 1 hour. Punch down; take out and divide in two. For each loaf: Knead about a minute; roll out loaf pan width and ~ 18" long. Coat with water, then sprinkle half the cinnamon/sugar mixture over and roll up. Place in loaf pan; cover with plastic wrap; place in warm area about 30 minutes. Bake 45-60 minutes at 350 or until tops brown and bottoms sound hollow when tapped. Take out; let cool a bit. For a soft crust, place in plastic bag before completely cool. Makes two loaves.
