You may never want to eat store-bought granola again when you see how simple it is to make. Serve the granola in a bowl and pour on some nondairy milk, or eat it right out of your hand for a quick snack. It makes a crunchy topping on sliced fresh fruit and vegan ice cream.

Recipe Ingredients for Cinnamon-Maple Granola

2 1/2 cups rolled oats
1/4 cup almonds, chopped
1/3 cup walnuts, chopped
1/4 cup sunflower seeds
2 tbsp cashews
1/3 cup pure maple syrup
1/4 cup safflower oil
1 tsp cinnamon, ground
1/8 tsp salt
1/3 cup raisins

Recipe Directions for Cinnamon-Maple Granola

  1. Preheat the oven to 350 degrees.

  2. Combine all the ingredients, except the raisins, in a large bowl. Stir to coat with oil. Spread the mixture out on a lightly oiled baking sheet and bake for 20 minutes until golden, stirring every 5 minutes. Granola cooks quickly, so watch it carefully so it does not burn.

  3. Remove from the oven and stir occasionally to dispel the heat. When completely cooled, add the raisins. Transfer to an airtight container. It will keep for 3 weeks.

  4. Variation: You can substitute dried cherries, cranberries, figs, or apples for the raisins to vary the flavor of the granola. Dried fruit burns easily, so always add it after the granola is removed from the oven.
