Recipe Ingredients for Cinnamon Delectapples

1 1/4 cup All-Purpose Flour
1 tsp. Cinnamon
1/2 tsp. Baking Soda
1/4 tsp. salt
3/4 cup Brown Sugar
1/2 cup Butter, softened
1/2 cup Sugar
1 egg
1/2 cup Dried Apples, chopped
1/2 Apple, chopped

Caramel Topping:
6 tbsp. butter, softened
1/4 cup brown sugar
1/4 cup powdered sugar
1 tbsp. water
1 tbsp. milk
2 tsp. all-purpose flour
1/4 tsp. vanilla

Recipe Directions for Cinnamon Delectapples

  1. The Cookie:

  2. Sift together the flour, baking soda, salt, and cinnamon and set aside.

  3. In a large mixing bowl, cream softened butter and the sugars together until light and fluffy. Add the egg and beat well.

  4. Slowly incorporate the flour mixture into the creamed butter, egg, and sugar mixture. Gently fold in dried and chopped apples.

  5. Chill the dough for at least an hour.

  6. The Caramel Topping:

  7. In a small saucepan, combine flour, brown sugar, 4 tbsp. butter, and water. Heat until the sugar is dissolved and the mixture starts to boil. Remove the pan from heat.

  8. As the sugar mixture cools, in a separate bowl, mix 2 tbsp. softened butter with the powdered sugar, milk, and vanilla until light and fluffy. Add the caramelized sugar mixture to the powdered sugar mixture. Stir until the topping is smooth and thickens.

  9. When ready to bake cookies: using a tablespoon, scoop out dough and form it into balls. Place on baking sheet 2" apart (no more than 6-8 cookies per sheet). With the back of a flat measuring cup, gently flatten the dough balls into 1" discs. Bake cookies in a preheated 400 degree F oven for 8 minutes or until golden brown.

  10. Once the cookies have cooled, drizzle caramel topping over the tops.

  11. Yield: 36 servings
