I tweaked a Cinnamon-Raisin Bread recipe to make a healthy Breakfast &/or Snack choice after I was recently diagnosed with Diabetes. Try the recipe with different fruits & nuts...blueberries are great (soak dry blueberries in hot water just covering berries & add water w/berries to recipe). Also try flavored, no sugar added applesauce. I get approx 15 slices from a 1.5 lb loaf.

Recipe Ingredients for Cinnamon Cranberry-Almond Bread (for Bread Machine)

1 cup Water, 80 degrees F
4 oz Applesauce, no sugar added
1 tbsp Brown Sugar
3 3 pkts Splenda
1 tsp Salt
2 tbsp Almond Milk
3 tsp Cinnamon
2 tbsp Benefiber
1 c Bread Flour
1 c Whole Wheat Flour
1/2 c Sliced Almonds
1/4 c Flax Seed
3/4 tsp Baking Powder
2 tsp Active Dry Yeast
1/2 c Dried Cranberries, chopped (NOT Craisins)

Recipe Directions for Cinnamon Cranberry-Almond Bread (for Bread Machine)

  1. Add all ingredients, except Cranberries, in order shown to bread machine pan.

  2. Set bread machine to Fruit/Nut Course for 1.5 lb loaf. **(For Rapid Fruit/Nut Course use 2-1/2 tsp yeast)

  3. Be sure to scrape down sides of pan during kneading process to ensure all flour is mixed in.

  4. At 1st beep, add Cranberries. *Dough should be SLIGHTLY sticky, adjust by adding small amounts of flour or warm water.

  5. When baking is complete, remove pan from machine & remove bread from pan & cool completely on rack.
