Recipe Ingredients for Cinnamon Coffee Cake (Vegan)

1 c almond milk
1/3 c canola oil
1 tbsp vinegar
1 c all-purpose flour
1/2 c granulated sugar
1 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
1/4 tsp salt
3/4 c all-purpose flour
1/4 c granulated sugar
2 tsp ground cinnamon
1/4 tsp salt
1/4 c chopped walnuts
1/3 c melted vegan butter

Recipe Directions for Cinnamon Coffee Cake (Vegan)

  1. Preheat the oven to 350F. Grease a 9-inch baking dish.

  2. To make the cake, combine the milk, oil, and vinegar in a bowl and set aside. In a large bowl, mix together the 1 c flour, 1/2 c sugar, baking powder, baking soda, 2 tsp cinnamon, and 1/4 tsp salt. Add the milk mixture and stir until just combined. Pour into the prepared baking dish.

  3. To make the crumble, in a small bowl, combine the flour, sugar, cinnamon, slat, and walnuts. Add the butter, and use your hands to thoroughly work it into the dry ingredients. Spoon on top of the batter, covering the entire area.

  4. Bake for 35-40 min, until a toothpick inserted into the middle comes out clean.
