Cinnamon & Carrots Muffin cooked in a muffin

Recipe Ingredients for Cinnamon & Carrots "Muggfin"

1 tbs Milled Flax Seed
1 tbs Quick Oats
1 tbs Organic Oat Flour
1 oz Vanilla Yogurt Carb Master (2 TBS)
1 tbs Almonds
1 oz. shredded carrots
1 tbs Cinnamon
1 tsp nutmeg
1/2 tsp baking powder
1 large egg
1/2 orange

Recipe Directions for Cinnamon & Carrots "Muggfin"

  1. In a microwavable mug, whisk eggs. Add dry ingredients and yogurt. Mix until well blended. Place in microwave for about 75 seconds. Do not overcook.

  2. When done, flip over unto plate.

  3. Slice half an orange for fruit to eat with muffin.
