Recipe Ingredients for Cinnamon Carrot Pie

4 cups carrots, cooked and mashed
12 oz fat free evaporated milk
1/2 cup splenda for baking
2 eggs
1/4 tsp ginger
2 tsp cinnamon
1 pie crust

Recipe Directions for Cinnamon Carrot Pie

  1. Boil the carrots until soft, drain water and mash.

  2. Preheat oven to 400 degrees.

  3. combine all of ingredients. except pie crust, beat for 2 minutes.

  4. pour mix into pie crust and bake for 15 minutes. Lower heat to 350 degrees and bake for 45 minutes longer or until filling is set.

  5. Let cool before serving.
