Just having fun. Similar to breakfast cake, but I think a little better.

Recipe Ingredients for Cinnamon Cake

1 1/2 cup Whole Wheat Pastry Flour
3/4 cup Soy Protein Isolate
1/4 cup Organic Sugar
3 tablespoons Baking Powder
1 tablespoon Cinnamon
1/4 teaspoon Sea Salt
1 3/4 c Water
1/4 cup Canola Oil
1/4 teaspoon Vanilla

Recipe Directions for Cinnamon Cake

  1. Mix all dry and wet ingredients separately in bowls. Add 1 tablespoon dry ingredients to wet as a catalyst, and stir well. Add wet mixture to dry. Mix completely with no lumps.

  2. Spray 9" cake pan with canola pan spray, then use tablespoon to push thick batter into the pan. Use the back of the spoon to smooth the batter out to the edges of the pan and to make it flat. Use base-frosting hand-motion, as if adding the first layer of frosting to a cake.

  3. Bake at 350 degrees for 35 - 40 minutes. Can be topped with pecans and a 50/50 organic sugar and cinnamon mix sprinkled on top. Can be eaten with Smart Squeeze and Pancake Syrup (see my recipe). Apple slices or cubes can be mixed into the batter prior to adding it to the pan.
