Recipe Ingredients for Cinnamon Buns

2 1/4 tsp. dry yeast
1 cup soy milk, warm
3 tbs oil
1 tbs sugar
1/2 tsp salt, scant
1/3 cup whole wheat flour
2/3 cup flour
1/4 cup whole wheat flour
4 tsp whole wheat flour
2 tbs flour
2 tsp flour
3 tbs light corn syrup
3 1/2 tbs brown sugar
2 tsp cinnamon
1 pinch nutmeg
1/4 cup walnuts, finely chopped

Recipe Directions for Cinnamon Buns

  1. In a large bowl, dissolve the yeast in 1/4 cup soy milk.

  2. Add the oil, sugar, salt, 1/3 cup flour, 2/3 cup whole wheat flour, and the remaining soy milk.

  3. Beat on medium speed for 3 minutes. Stir in 1/3 cup, 2 Tbs and 2 tsp flour. Stir in 2/3 cup, 1/4 cup and 4 tsp whole wheat flour.

  4. Knead dough (can use dough hook) for around 6-8 minutes, until dough is smooth and elastic.

  5. Place dough in bowl coated with cooking spray, turn once to coat dough.

  6. Cover with a towel, place on top of heated oven (in a warm place) and let rise until doubled, around 1/3 hour or more.

  7. Punch down dough. Turn out onto lightly floured surface.

  8. Roll out to desired thickness, make sure the shape is rectangular.

  9. With a silicone brush (sprayed with pam) carefully spread corn syrup onto dough nearly to edges.

  10. In a bowl, combine the nutmeg, cinnamon and brown sugar; sprinkle onto dough.

  11. Roll the dough up jelly roll style, starting with a long side, pinch the seam to seal it.

  12. Cut the roll into approximately 17 pieces.

  13. Place, cut side down in two 9-inch round pans.

  14. Cover and let buns rise for around 40 minutes, until doubled.

  15. Bake at 350 degrees for 25 minutes (may take up to 30). DO NOT OVER BAKE! They will dry out.

  16. Keep in airtight container.

  17. These buns can be frozen, but they'll never make it there! Enjoy!!
