Recipe Ingredients for Cinnamon Bun Cookies

1 cup raisins
1 cup orange juice
1 cup self rising flour
3 tbsp sugar
50 grams butter, melted (a cube about 1.5 inches across)
1/2 cup cold water (you may not need this much)
1/2 tsp cinnamon
4 slices lemon, juice and zest (1/2 a lemon)
4 tsp brown sugar

Recipe Directions for Cinnamon Bun Cookies

  1. Cover raisins with orange juice and let soak overnight. OR microwave until warm before you begin making the cookies and let them soak until needed.

  2. Preheat oven to 300 degrees F.

  3. Combine flour, sugar, and cinnamon. Stir in melted butter until combined and crumbly.

  4. Add small amount of cold water to dough and continue mixing. Repeat with cold water until dough just begins to form a single ball. WARNING: Add water a small bit at a time and have patience. It is very easy to get too much water here and have batter rather than dough. You need to have dough.

  5. Turn out onto floured surface.

  6. Flour your hands and knead the dough for about one minute. Put it in a plastic bag and refrigerate.

  7. Meanwhile, drain juice from raisins and chop them into small pieces.

  8. Put half the dough onto a floured surface and roll into an oblong shape 1/4 inch thick.

  9. Spread half the chopped raisins on the dough. Grate lemon zest on top.

  10. Carefully roll dough like a jellyroll (is okay if it cracks a little, just keep rolling.) Cut into 1/4 inch slices with a sharp knife and place onto greased cookie sheet. Flatten them down a little. Repeat with other half of dough and raisins.

  11. Bake 10 - 15 minutes. They will probably need 15, but check them at 10. They should just be turning golden brown when done.

  12. Combine juice of 1/2 lemon plus 4 tsp brown sugar, enough to make a syrupy glaze.

  13. Spoon glaze onto cookies while they're hot. Let cool before transferring.
