This heart-healthy, low-fat/high protein, diabetic-healthy, dieter's dream, 35 minute (bake time) recipe goes great with your favorite low carb pancake syrup and low-fat butter substitute :)

Recipe Ingredients for Cinnamon Breakfast Cake

1 1/2 cup Original Unsweetened Almond Milk
12 oz. Silken Tofu
0.03 teaspoon Vanilla
4 packets Stevia
1 tablespoon Ground Cinnamon
2 tablespoons Baking Powder
1/16 teaspoon Salt
1 1/4 c Whole Wheat Pastry Flour

Recipe Directions for Cinnamon Breakfast Cake

  1. Pre-heat oven to 350 degrees.

  2. Spray 9" heart-shaped pan with canola pan spray.

  3. Blend together all wet ingredients, in order.

  4. In a large bowl, mix together remaining dry ingredients, then mix wet mixture into dry mixture.

  5. Pour batter into pan - it should fill it about half way.

  6. Bake for 35 minutes or until the sides barely pull away from the edge of the pan. Should not be "tanned."

  7. * Other pans can be used, though I haven't tried them with this recipe yet. Experiment with baking times given for regular sponge cake, depending on which pan you're using.
