Great late afternoon snack when the blood sugar starts to fall.

Recipe Ingredients for Cinnamon bran muffins

2 eggs
100 ml honey
100 ml sunflower oil
450 ml applesauce
250 g graham flour
165 g wheat bran
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon

Recipe Directions for Cinnamon bran muffins

  1. Heat oven to 200 C.

  2. Beat eggs until foamy. Stir in honey, oil and applesauce.

  3. Mix all dry ingredients together and then fold into the egg mixture. Add a little water if the batter is too thick.

  4. Spoon into muffin pan and bake for 12-18 minutes.
