These are tasty balls that are a healthy version of banana nut and fruit muffins.

Recipe Ingredients for Cinnamon Banana Oat Balls

1 cup whole wheat flour
3/4 cup oatmeal
1/16 cup sugar
2 egg whites
1 tbsp. lemon juice
1 tbsp. grated lemon peel
1/2 tsp. baking powder
1 tsp. baking soda
1/3 cup chopped peanuts
1/3 cup chopped dried apricots
1 tsp. vanilla extract
1/4 tsp. salt
1 cup bananas
1/2 tsp. nutmeg
1 tsp. cinnamon

Recipe Directions for Cinnamon Banana Oat Balls

  1. Mix flour, oatmeal, baking power, baking soda, cinnamin, nutmeg, and salt.

  2. In separte bowl mix beaten eggs, mashed bananas, sugar, lemon juice, lemon peel, peanuts, apricots, and vanilla extract.

  3. Then add flour mixture to banana mixture.

  4. Roll into balls.

  5. Bake for 15 minutes on 350 degrees.

  6. Immediately place into bag with a little splenda and cinnamin and shake until balls are coated with the mixture.
