  1. This loaf is not too sweet and perfectly moist. The cinnamon flavor really comes through, especially if you use cinnamon chips. It's perfect for a quick healthy breakfast or snack on the go!

  2. Ingredients (12 slices)

  3. 2 medium ripe bananas, mashed

  4. 1/3 cup plain greek yogurt

  5. 1/4 cup butter, melted

  6. 2 eggs

  7. 1/2 cup + 2 tablespoons brown sugar

  8. 3/4 cup oat bran

  9. 3/4 cup flour

  10. 1/4 cup flaxseed meal

  11. 3/4 tsp baking soda

  12. 1/2 tsp salt

  13. 1 tsp cinnamon

  14. 1/4 cup cinnamon chips, optional

  15. Instructions

  16. Preheat oven to 350 and spray a loaf pan with cooking spray.

  17. Combine banana, yogurt, butter, and eggs in a medium bowl.

  18. Add brown sugar and beat to incorporate air into the batter.

  19. Add the rest of the dry ingredients and stir until just combined.

  20. Stir in any additions you would like to add (chopped nuts, dried fruit, chocolate chips, etc.)

  21. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
