Recipe Ingredients for Cinnamon Apple Oatmeal Muffin

1/4 cup Becel Regular Margarine
0.33 cup granulated sugar
1/4 cup Pure Cane Sugar
1 large egg, beaten
3/4 cup white flour
3/4 cup whole wheat flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
9/10 cup 1% milk
1 tbsp lemon juice
1/2 cup Old Fashioned Quaker Oats
3 tbsp benefiber
74 g cored apple slices, diced
1/4 cup Unsweetened Apple Sauce
1/2 tsp vanilla extract
1 tbsp granulated sugar
1/2 tsp cinnamon

Recipe Directions for Cinnamon Apple Oatmeal Muffin

  1. In a 1 cup measuring cup, add 1 tbsp lemon juice and make up to 1 cup with milk. Pour into large mixing bowl. Add rolled oats to soak.

  2. Blend margarine, sugar, brown sugar and beaten egg until smooth.

  3. Core apple and slice and dice. Should have approximately 1 cup and a bit.

  4. Add sugar/butter mixture to oats. Add apple and apple sauce and vanilla. Mix.

  5. In a separate bowl sift or blend salt, flours,first cinnamon, baking soda and baking powder.

  6. Add to wet ingredients and mix until moistened - don't over mix.

  7. Distribute evenly into paper lined muffin tins. Combine 1 tbsp sugar and 1/2 tsp cinnamon in small cup - sprinkle over muffins. Place in 400 F oven for 20 minutes.

  8. Enjoy.
