Recipe Ingredients for Cinnamon Apple Cookies

1/2 cup coconut oil
1/4 cup pure maple syrup
1 apple, peeled, cored and cut into fourths
1 tsp pure vanilla extract
1 egg
2 cups almond meal
2 tbsp cinnamon
1 tsp baking soda
1/2 tsp salt

Recipe Directions for Cinnamon Apple Cookies

Preheat oven to 350 degrees. In a food processor, puree the butter (or coconut oil), syrup, apple, vanilla and egg. In a separate bowl, combine almond flour, cinnamon, salt and baking soda. Pour in wet ingredients and stir until combined. Scoop onto a parchment paper-covered baking sheet and bake for about 10 minutes. Cool on wire rack, and gobble up!
