great way to get fiber in a low fat muffin. These rarely make it 24 hours in our house full of kids.

Recipe Ingredients for cinnabean muffins

1 cup Sugars, Granulated
2 tbsp oil
1/2 cup Applesauce
3 large Egg, White
1 large Egg, White
1 tsp Vanilla Extract
2 cup Enriched Unbleached White Flour
1 tbsp Cinnamon, Ground
16 oz pinto beans, blended until smooth
1/2 teaspoon Baking Powder
1/2 tsp Leavening Agents, Baking Soda
1/2 tsp Salt, Table

Recipe Directions for cinnabean muffins

mix wet ingredients, then blend in dry ingredients just until moistened. Pour in 18 muffin tins sprayed with pam. Bake at 350 degrees for 18-20 min.
