Does use whey protein you can try subbing a non-dairy protein if you want but I can't tell you how it'll turn out. I often will add a half ounce of toasted pecans to this recipe, as you may guess that adds another 100kcal as well as more (good) fats... ** EDIT: I am going to test out lowering the baking powder and baking soda amounts because these add a ton of sodium - without them this would be a very low sodium recipe but with them it is surprisingly high

Recipe Ingredients for Cindy's Pumpkin Protein Pancake 2

1/2 cup pumpkin puree
1/2 scoop whey protein
1/2 tsp cinnamon
1/4 tsp baking powder
1/4 tsp baking soda
1/4 cup whole wheat flour
2 tablespoons milled flax seed
6 tablespoons water
1 non-stick spray

Recipe Directions for Cindy's Pumpkin Protein Pancake 2

  1. Mix Pumpkin, Whey, Cinnamon - Mush together well.

  2. In a separate bowl mix flour, baking powder, baking soda.

  3. In third bowl, mix flaxseed and water, let sit for a few minutes.

  4. Fold pumpkin mixture into flour mixture. Then fold the flax mixture in as well.

  5. If desired, add 1/2 ounce toasted chopped nuts (remember this isn't in the recipe analysis so add it separate)

  6. You can add more water to thin it further - I usually do - but it won't get to the pourable consistency of normal pancakes so don't worry about that

  7. Spray heated skillet (medium low to medium heat) with non-stick spray.

  8. Spoon 1/4 batter into pan, swirl/push batter around in pan to form an evenly flat round pancake (won't spread out by itself)

  9. Cook until firm on the bottom side, then flip with a large flat surfaced flipper and finish up the other side.

  10. Enjoy! I like this recipe plain or with a drizzle of raw honey
