A combination of several recipes melded into one, combining ripe bananas, whole wheat pastry flour and old fashioned oats, nonfat greek yogurt, dry and wet nonfat milk, eggbeaters, equal parts splenda and brown sugar, in order to maximize on whole grains and protein while minimizing fat and empty calories.

Recipe Ingredients for Cindy's guilt-free banana muffins

1 1/2 cups whole wheat pastry flour
1 cup old fashioned oats
1/2 tsp salt
1/2 tsp baking soda
1 1/2 tsp baking powder
2 tsp cinnamon
1 1/2 cup ripe bananas
2/3 cup Original Eggbeaters (or 2 eggs)
1/4 cup brown sugar (can sub honey)
1/4 cup SPLENDA no calorie
2 1/4 cup nonfat milk (Use 2/3 c dry milk - did not list this on calorie count so had to enter calories as wet - and 1/4 wet)
6 oz nonfat plain Yogurt (fage total 0% greek yogurt)
2 tsp vanilla extract

Recipe Directions for Cindy's guilt-free banana muffins

  1. Mix wet ingredients together in one bowl.

  2. Mix dry ingredients in second, larger bowl.

  3. Gradually mix wet into dry ingredients until well combined.

  4. Grease muffin cups and dust with flour, or line with cup liners.

  5. Fill muffin cups equally, between 1/2-3/4 full.

  6. Bake the muffins for 18-20 min at 350 degrees (bake time will depend on how moist you want your muffins to be!)

  7. Yield 12 muffins!
