Recipe Ingredients for Cindy's Fruit Salad

1 head Lettuce
1 red onion, peeled, halved, thinly sliced crosswise
2 avocados, peeled, pitted, and sliced into wedges
2 navel oranges, peeled, sliced into rounds
1/2 cup Olive Oil
1/2 pint strawberries, with tops cut off
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon Tarragon, Dried
1 pinch of sugar

Recipe Directions for Cindy's Fruit Salad

  1. Arrange lettuce, onion, avacado and orange on platter.

  2. Drizzle with Strawberry Vinaigrette.

  3. Garnish with berries, if desired

  4. Strawberry Vinaigrette:

  5. Combine the olive oil, strawberries, vinegar, salt pepper, tarragon and sugar in a food processor.

  6. Whirl until the strawberries are pureed.

  7. The vinaigrette dressing can be prepared ahead of time and refrigerated. Stir before using.
