Cilantro Soup Recipe

Thai soup with cilantro, leeks, and zucchini

Recipe Ingredients for Cilantro soup

1/4 cup olive oil
1 onion
1 garlic clove
1 leek
1 zucchini
1/2 cup rice
4 cups water
2 cups cilantro

Recipe Directions for Cilantro soup

  1. Chop the onion, garlic and leek very thinly, seperating the leek rings, and saute in skillet with enough olive oil to coat.

  2. Turn the stove on low, and while it's heating, turn and toss the veggies until they're all covered in olive oil.

  3. Cover skillet, and stir occassionally until the onion is soft and doesn't crunch when you smush it.

  4. While that's simmering, peel the zukes and chop finely.

  5. When that's done, add everything to stewpot with four cups water, the rice, and bring to a boil. Simmer on low until the rice is cooked.

  6. Add the cilantro leaves, lightly pushing them below the surface of the water. Cover, and let sit until wilted.

  7. Stir, let cool a bit, and enjoy! Tastes especially good with homemade bread dipped into the soup.
