Yummy and fresh for warm summer nights! This is a filling and healthy dinner.

Recipe Ingredients for Cilantro Lime Tostada

1 whole wheat tortilla
1/4 cup fat-free refried beans
2 tbs salsa
1 1/2 cups romaine lettuce, torn
1/2 tomato, sliced
1/3 avocado, sliced
1/2 tsp fresh lime juice
1/3 cup english cucumber, small dice
1 green onion, diced
1 tbs fresh cilantro, leaves only

Recipe Directions for Cilantro Lime Tostada

  1. place tortilla on a microwave safe plate.

  2. spread refried beans onto the tortilla.

  3. heat for 40 -45 seconds on high cook power.

  4. remove from microwave.

  5. drizzle salsa over the beans.

  6. top with lettuce, sliced tomato, avocado, cucumber, onion and cilantro.

  7. squeeze juice from 1 wedge of fresh lime over top, expecially over the avocado slices.

  8. sprinkle Mrs. Dash to taste. Note: for added flavor and texture, grill the tortilla, then top with heated beans and remaining ingredients.
