From Good Housekeeping triple-tested at the Good Housekeeping Research Institute A spicy dressing that features poblano peppers and cilantro is definitely worth all the effort.

Recipe Ingredients for Cilantro Lime Dressing

2 tablespoons poblano pepper
20 sprigs cilantro
1/2 cup fresh lime juice
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1/4 cup vegetable oil

Recipe Directions for Cilantro Lime Dressing

  1. Preheat outdoor grill on medium. Place poblano pepper on hot grill grate. Cook 12 to 15 minutes or until blackened all over, turning occasionally. Wrap pepper in foil; let cool. Remove pepper from foil; peel off skin and discard. Remove and discard stem and seeds.

  2. Puree pepper in blender or food processor along with cilantro, fresh lime juice, salt, and pepper. With machine running, gradually add vegetable oil until blended.
