Recipe Ingredients for Cilantro Couscous

2 cups couscous
2 1/2 cups water
2 tbsp butter
1 tbsp Chicken Base
1 tbsp olive oil
1/2 cup chopped shallot
1 tsp cumin
1/2 cup chopped cilantro
2 tbsp lemon juice
1 tbsp lemon zest
1/4 tsp ground black pepper

Recipe Directions for Cilantro Couscous

  1. Cook couscous in broth made from water and better than bouillon.

  2. Heat the oil in a small skillet over med-high heat and add the shallots. Cook stirring frequently until shallots soften, about 3 minutes. Stir in the cumin and cook 30 seconds longer. Stir skillet contents into couscous along with the remaining ingredients and serve.
