Ciabatta Bread Recipe

Low fat-low cal, big serving size is approximately 2 1" slices. Make in a bread machine or by hand. Loaves come out chewy-crispy on the outside and tender on the inside. Add 1 tbsp of crushed rosemary and 1 tbsp of crushed basil for a fragrant herb bread.

Recipe Ingredients for Ciabatta bread

1 1/2 cups water
1 1/2 teaspoons salt
1 teaspoon white sugar
1 tablespoon olive oil
3 1/4 cups flour
1 1/2 teaspoons yeast

Recipe Directions for Ciabatta bread

  1. Place tepid water, salt, sugar and yeast in mixing bowl or machine. Stir, and allow yeast to bloom for about 10 minutes. Yeast is ready when it forms a few small bubbles. Place remaining ingredients into the pan of the bread machine in the order suggested by the manufacturer. Select the Dough cycle, and Start.

  2. Dough will be sticky and wet once cycle is completed, do not add more flour. Allow the dough to proof in the machine or a covered bowl in a draft free place until at least doubled in volume.

  3. Lightly flour or use parchment lined baking sheets. Divide into 2 pieces, and form each into a 13x14 inch oval. Place loaves on prepared sheets, dimple surface, and lightly flour. Cover, and let rise in a draft free place for approximately 45 minutes.

  4. Preheat oven to 425 degrees F (220 degrees C).

  5. Place loaves in the oven, positioned on the middle rack. Bake for 25 to 30 minutes. During baking, spritz loaves with water every 5 to 10 minutes for a crispier crust
