Recipe Ingredients for Chunky Tomato Soup

1 tbsp margarine
1 cup onion, chopped
2 cups potatoes, cubed
1 cup chopped celery
1 cup chopped carrots
1 clove garlic, minced
1 tbsp italian seasoning
1 cup skim milk
1 tsp cornstarch
7 1/4 oz tomatoes, canned
4 oz black beans, canned
4 oz kidney beans, canned
1 cup chicken broth
1 tbsp tomato paste

Recipe Directions for Chunky Tomato Soup

  1. Melt the margarine over medium heat and cook onions until tender.

  2. Add potatoes, celery, carrots, garlic and Italian seasoning.

  3. Add milk, stir in cornstarch, and bring to a boil

  4. Add tomatoes, beans, broth and tomato paste. Return to a boil, reduce heat, cover and simmer for 20 minutes; season with salt and pepper to taste; serve.
