This is a spicy and refreshing chilled soup for the summer time that's really easy to make. Unlike most gazpacho recipes, this one is really chunky and makes a great meal by itself.

Recipe Ingredients for Chunky Spicy Gazpacho

28 ounce diced tomatoes
28 ounce tomato juice
15 ounce black beans, drained and rinsed
1/2 green bell pepper, diced
1/2 red bell pepper, diced
1/2 red onion, diced
2 jalapeno peppers, seeded and finely chopped
1 medium cucumber, peeled, seeded and diced
1/4 cup red wine vinegar
4 tbsp lime juice
2 tbsp lemon juice
1 tbsp tabasco sauce

Recipe Directions for Chunky Spicy Gazpacho

  1. Combine half of the diced tomatoes and half of the tomato juice in a large mixing bowl and puree using a hand blender.

  2. Add the remainder of the diced tomatoes and tomato juice to the bowl.

  3. Add the green pepper, red pepper, jalapeno peppers,

  4. cucumber, onion and black beans to the bowl.

  5. Add the vinegar, lime juice and lemon juice to the bowl.

  6. Add the tabasco sauce (use more or less to taste) and salt and pepper to taste.

  7. Add more vinegar or lime or lemon juice to get the right level of acidity to your taste.

  8. Mix all the ingredients in the bowl and cover and chill for about 2 hours before serving. You can serve with diced avocado on top and some crusty bread.
