Recipe Ingredients for chunky Potato Soup

4 medium potatoes, peeled and cubed
1/3 c. chives
1/3 c. chopped onion
1/4 c. chopped celery
1 1/2 c. chicken broth
3 T. butter
3 T. all-purpose flour
2 1/2 c. skim milk
3/4 t. salt
1/2 t. pepper
1 c. cheddar cheese

Recipe Directions for chunky Potato Soup

  1. In a large saucepan, combine the potatoes, onions, carrot, celery and broth. Bring to boil. Reduce heat; cover and simmer for 12-15 minutes or until vegetables are tender; lightly mash.

  2. Meanwhile, in small saucepa, melt butter; stir in flour until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir into potato mixture. Cook and stir until thickened and bubbly. Add salt and pepper. Remove from heat; stir in chees until melted
