Chunky Potato Soup Recipe

A delicious rib sticker, great for cold winter nights! A bit high on the fat scale, but worth it for the occasional indulgence!

Recipe Ingredients for Chunky Potato Soup

4 medium Potatoes, peeled and chopped up (I like to make thin little discs because they cook quicker)
2 large Carrots, peeled and chopped
2 cups Celery, chopped
1 large Onion, chopped
1 1/2 cups Chicken Broth
3 tbsp Butter or Margarine
3 tbsp Flour
2 1/2 cups 1% Milk
1/2 tsp Black Pepper (fresh ground, if you've got it)
1 cup Low Fat Cheddar Cheese, grated (marble is best)

Recipe Directions for Chunky Potato Soup

  1. Combine veggies and broth in a pot, bring to a boil.

  2. Reduce heat, cover, and let simmer for 15 min.

  3. Mash the potatoes lightly (don't smoosh them too much, or it won't be chunky potato soup).

  4. Concurrently, melt butter in a small pot, then add flour, stirring until there are no more lumps.

  5. Add milk slowly, stirring it in, then bring to a gentle boil.

  6. Keep boiling, stirring constantly, until thickened (about 2-3 min).

  7. Add butter/milk/flour mixture into the bigger pot, stir and cook over medium heat until thickened.

  8. Remove from heat, add pepper, and stir in cheese until melted!

  9. Serve while nice and hot for the full experience, though it's not bad re-heated either (if any of it survives to leftover status)
